Recipe by Brian McDermott, The Foyle Hotel
These savory scones are absolutely delish! Only 5 Ingredients required in this cracking recipe.
Very quick to make and really easy too.
Servings: 1 yield(s)
Prep Time: 10 mins
Cook Time: 12 mins
Total Time: 22 mins
  • 3 rashers dry cure bacon, chopped finely
  • 225 g self-raising flour
  • 40 g butter
  • 100 g Kilard cheddar
  • 100 ml buttermilk
  1. Preheat a frying pan on medium head
  2. Fry the bacon on a dry hot pan. Sieve the flour and add the Melted butter to the buttermilk and combine. Add the grated cheese and bacon. Gently knead to form a dough. Turn out onto floured table and gently shape to desired size. Dust frying pan with flour and place scones on the pan. Cook for 6 minutes each side.
  3. Allow to cool before slicing and serve with a real Irish butter. Simple!
  4. My Top Tip: Store in an airtight container. Toast a slice for warm breakfast option with poached eggs.
