Perfect Cheddar Cheese Scones. Great served with soup, for afternoon tea or as part of a picnic.
They’re also super delicious served with smoked mackerel.
- Preheat the oven to 180C /Gas 4. Soft all the dry ingredients in a large mixing bowl and rub in the butter until the mixture resembles fine breadcrumbs. Add the cheese.
- Mix the milk and egg and add to the dry ingredients. Combine to form a dough. (Try not to over mix because you want to keep as much air in the mixture as you can.)
- Turn the dough onto a floured surface and roll out. Cut 6 - 8 rounds and place on a lined baking tray. Brush with a little egg wash and bake for 10 - 12 minutes.
- Cool on a wire rack for as long as you can bear and then devour them.
