Kilard Cheddar Cheese Scones

Recipe by Claire and Stephanie, Ahoy Cafe Perfect Cheddar Cheese Scones. Great served with soup, for afternoon tea or as part of a picnic. They’re also super delicious served with smoked mackerel.

  • 225 g plain flour
  • 1 tsp baking powder
  • 1 pinch sea salt
  • 70 g butter (in small cubes)
  • 100 g Kilard Cheddar
  • 70 ml milk
  • 1 egg
  1. Preheat the oven to 180C /Gas 4. Soft all the dry ingredients in a large mixing bowl and rub in the butter until the mixture resembles fine breadcrumbs. Add the cheese.
  2. Mix the milk and egg and add to the dry ingredients. Combine to form a dough. (Try not to over mix because you want to keep as much air in the mixture as you can.)
  3. Turn the dough onto a floured surface and roll out. Cut 6 - 8 rounds and place on a lined baking tray. Brush with a little egg wash and bake for 10 - 12 minutes.
  4. Cool on a wire rack for as long as you can bear and then devour them.
