Donegal Farmhouse Cheddar Cauliflower Cheese

  • Preheat the oven to 180°C/350°F/gas 4
  • Quarter the cauliflower and cut into florets
  • In a pot of boiling water, cook the cauliflower, barely covered, for 3 minutes then take out and drain on kitchen towel to dry
  • To make the sauce, peel and finely slice the garlic and shallot, then place in a pan with the butter over a medium heat
  • When the butter has melted, stir in the flour for 1 minute to make a paste, then gradually add the milk, whisking as you go, until the mix is smooth and starts to thicken
  • Grate in half the Cheddar, mix well and season to taste
  • Arrange the cooked cauliflower in an appropriately sized baking dish
  • Pour over the cheese sauce, grate over the remaining Cheddar and season with some sea salt
  • Bake for 20/25 minute, or until golden and cooked through, then enjoy!
