Donegal Farmhouse Cheddar Cauliflower Cheese

A Sunday classic and a big favorite. Remember the better the cheese the better the dish :)

  • 2 cloves of garlic
  • 30 g shallot
  • 50 g butter
  • 50 g plain flour
  • 600 ml milk
  • 75 g Kilard Donegal Farmhouse Cheddar cheese
  • 1 Ballyholey Farm cauliflower
  1. Preheat the oven to 180°C/350°F/gas 4
  2. Quarter the cauliflower and cut into florets
  3. In a pot of boiling water, cook the cauliflower, barely covered, for 3 minutes then take out and drain on kitchen towel to dry
  4. To make the sauce, peel and finely slice the garlic and shallot, then place in a pan with the butter over a medium heat
  5. When the butter has melted, stir in the flour for 1 minute to make a paste, then gradually add the milk, whisking as you go, until the mix is smooth and starts to thicken
  6. Grate in half the Cheddar, mix well and season to taste
  7. Arrange the cooked cauliflower in an appropriately sized baking dish
  8. Pour over the cheese sauce, grate over the remaining Cheddar and season with some sea salt
  9. Bake for 20/25 minute, or until golden and cooked through, then enjoy!
