Prawn and Monkfish Gratin

Recipe by Ronan Cunningham, Atlantic Treasures Fish Shop The most delicious Hearty Starter! If you haven’t tried this it’s a must! Peeled Shrimps can be used instead of prawns. The dishes become very hot, so take care when removing them from the roasting tray

  • 1 x 6 Hole “Inkwell” Dish
  • 50 g Monkfish cut into 6 pieces
  • 6 Donegal Bay Prawns (peeled and de-veined)
  • 25 g Garlic Butter
  • 1 Wedge of Lemon
  • 1 pinch Salt and White Pepper
  • 25 g Grated Kilard Cheddar
  1. Place a small amount of Garlic Butter in each of the holes.
  2. Add one piece of Monkfish and one prawn to each hole.
  3. Put remainder of Butter on top of each prawn.
  4. Squeeze over a wedge of lemon.
  5. Season lightly with salt and Pepper.
  6. Cover with Grated Kilard Cheese.
  7. Lightly press down with your hand, to compact the dish.
  8. Place on a roasting tray and cook in a pre-heated oven at 180 deg C / 380 deg F / gas 5 For approx. 10 to 12 mins.
  9. Remove from oven, place dishes on a plate and serve with homemade brown bread.
